Last session of the season!  Don’t forget if you are a Friday CSA pick up member, you get your box this Thursday, December 30th. If you are a U-Dist. FM pick up, get your box and the location you notified us of.  We trust you had a fantastic holiday and hope this finds you happy and healthy and ready for 2011!  Enjoy!

 

Small CSA Box: ½ lb Salad Mix, ¼ lb Spinach, 1 bu Carrots, ½ lb Yellow Finn Potatoes, ¾ lb Parsnips, ½ lb Cannellini Beans, and 1 bu Chioggia Beets

 

Medium CSA Box: ¾ lb Salad Mix, ½ lb Spinach, 1 bu Carrots, ¾ lb Yellow Finn Potatoes, 1 lb Parsnips, ¾ lb Cannellini Beans, 1 bu Chioggia Beets, and 1 bu Leeks

 

Large CSA Box: 1 lb Salad Mix, ¾ lb Spinach, 2 bu Carrots, 1 lb Yellow Finn Potatoes, 1.25 lbs Parsnips, 1 lb Cannellini Beans, 2 bu Chioggia Beets, 2 bu Leeks, and ½ lb Brussel Sprouts

 

Recipe of the Week

Pasta with Greens and Beans

Ingredients:

8 ounces uncooked spiral pasta

1/2 pound bulk Italian sausage

1 small onion, chopped

2 garlic cloves, minced

1 bunch spinach, trimmed and coarsely chopped

15 oz cannellini beans, cooked (see last week’s newsletter for tips)

1 cup chicken broth

1/3 cup grated Parmesan or Romano cheese

 

Directions:

Cook pasta according to package directions.  Meanwhile, in a large skillet, cook sausage, onion and garlic until sausage is no longer pink and onion is tender; drain.  Stir in spinach, beans and broth. Cover and simmer for 6-8 minutes or until spinach is wilted and tender. Drain pasta; add to vegetable mixture.  Sprinkle with cheese.

The first official day of winter is the Dec. 21st, but if you ask anyone here at the farm it started in November!  Fun Washington Facts: On December 22, 1852, the Oregon Territorial Legislation created both King County and Pierce County.  This week also marks the birthdays of Sedro-Woolley, which was formed by a merger on December 19, 1898, and Granite Falls, which incorporated on December 21, 1903.  Enjoy the history and produce!

 

Small CSA Box: ½ lb Salad Mix, 2 bu Carrots, 1 bu Leeks, 1 lb Russet Potatoes, 1 hd Cabbage, 3 Anjou Pears, 2 bu Fennel, and 1 lb Garnet Yams

 

Medium CSA Box: ¾ lb Salad Mix, 3 bu Carrots, 2 bu Leeks, 1 ½ lbs Russet Potatoes, 1 hd Cabbage, 1 bu Chioggia Beets, 5 Anjou Pears, 4 bu Fennel, and 1 ½ lbs Garnet Yams

 

Large CSA Box: 1 lb Salad Mix, 4 bu Carrots, 3 bu Leeks, 2 lbs Russet Potatoes, 2 hd Cabbage, 2 bu Chioggia Beets, 6 Anjou Pears, 6 bu Fennel, and 2 lbs Garnet Yams

 

Recipe of the Week

Leek and Fennel Soup

 

Ingredients

2 tablespoons olive oil

3 large leeks, cleaned and thinly sliced

4 large stalks celery, thinly sliced

3 large white onions, peeled and halved

1 large fennel bulb, thinly sliced

2 large baking potatoes, peeled and cut into 1/2-inch cubes

1 tablespoon salt

1 1/2 teaspoons ground black pepper

8 cups water

2 cubes vegetable bouillon

 

Directions

In a large saucepan or soup kettle over medium-low heat, place the olive oil, leeks, celery, onions, fennel, potatoes, salt, and pepper, and cook and stir until the onions are translucent and the vegetables have begun to soften, about 10 minutes.

Pour 8 cups of water over the vegetables, bring to a boil, reduce the heat, and drop in the vegetable bouillon cubes. Simmer over low heat, stirring occasionally to dissolve the cubes, until the vegetables are tender and the potatoes have begun to thicken the soup, about 30 minutes.

Since the University District market will be closed on December 25th and January 1st, you have two options for picking up your CSA box:

1.                  Pick up your box Sunday, December 26th and January 2nd at the W. Seattle Market (California Ave SW and SW Alaska, Seattle ~ between 10:00 a.m. and 2:00 p.m.), or

2.                  Pick up your box on Thursday, December 23rd and 30th at one of our CSA pick up locations:

We will be delivering your produce on Thursday, December 23rd instead of Friday, Dec. 24th, and on Thursday, December 30th, instead of Friday, Dec. 31st.  This way you have your produce for your Christmas & New Years get-togethers. 

Same locations, same time-frame, just moved to Thursdays the 23rd and 30th.
