Almost feeling like winter out there! With the wind, rain, and snow in the forecast sounds like a good week to stay in and eat! Eat healthy that is…okay, maybe a sweet treat here and there .

Small CSA Box: 1/3 lb Salad Mix, 1 bu Carrots, ½ lb Yellow Finn Potatoes, ½ lb Brussels Sprouts, 2 Fuji Apples, 1 bu Leeks, ¼ lb Mache, and 1 ea Delicata Squash
Medium CSA Box: ½ lb Salad Mix, 2 bu Carrots, ¾ lb Yellow Finn Potatoes, ¾ lb Brussels Sprouts, 4 Fuji Apples, 1 bu Fennel, 1 bu Chioggia Beets, 1 bu Leeks, ¼ lb Mache, and 1 ea Delicata Squash
Large CSA Box: ¾ lb Salad Mix, 3 bu Carrots, 1 lb Yellow Finn Potatoes, 1 lb Brussels Sprouts, 6 Fuji Apples, 2 ea Onions, 1 bu Fennel, 2 bu Chioggia Beets, 2 bu Leeks, 1 bu Parsley, ½ lb Mache, and 2 ea Delicata Squash
I forgot to mention last week, but the potatoes are from our friends down the street at Alden Farms.
Recipe of the week
Golden Potato Soup
3 cups peeled and cubed potatoes
1/2 cup chopped celery
1/2 cup chopped onion
1 cube chicken bouillon
1 cup water
1 teaspoon dried parsley
1/2 teaspoon salt
1 pinch ground black pepper
2 teaspoons all-purpose flour
1 1/2 cups milk
1 1/2 cups shredded American cheese (I use Cheddar)
1 cup chopped ham
In a large stock pot add potatoes, celery, onion, chicken bouillon, water and parsley flakes. Season with salt and pepper and simmer until vegetables become tender.
In a separate bowl mix flour and milk. Once it is well blended, add to soup mixture and cook until soup becomes thick.
Stir in cheese, cooked ham or hamburger and simmer until cheese is melted.
